Review: Roger Constant Lemaire - Cuvée Les Hautes Prières - 2012

This house always produces high quality, punchy Champagnes. They are a non malolactic fermentation producer.

For me, this label needs more time in the bottle, another 5 years at least. The aromas and flavours are unified in expression of yellow stone fruits, white floral, citrus, salty pastry / nuts. The flavours appear independent and I feel aging will mellow each and unify them to what would be a great Champagne.

This family producer is located in Villers-sous-Chatillon.
