Tasted during a visit to Bollinger in Ay in 2020.
A big ripe wine with lots of ripe pinot fruit, but the long bottle ageing giving this Pinot dominant wine an umami “sweetness” as well as a toasty mineral complexity, and a very fine creamy mousse. One of my favourite RD’s with great persistence, lovely acidity and the ability to age.
